Chef Mike Rosenberg has been the personal chef to the Carnegie family, catered JFK Jr.'s wedding, owned his own restaurant and brings over 40 years of experience to the Zapata. With a focus on locally-grown, Mike prepares family-style meals using our own grass-fed bison and beef and locally grown San Luis Valley produce.
he dining experience at the Zapata is second-to-none. Led by chef Mike Rosenberg, who has worked for the Carnegies and Kennedies, each meal features freshly-prepared, gourmet offerings. Breakfasts of eggs made to order, biscuits and gravy, warm pancakes, cereal, and fresh fruit are followed up by homemade lunches eaten on the trail or in our dining room. Dinners are expertly prepared by Mike each evening and presented with a flair for our guests to
enjoy in our lodge-style dining room. Ranch-raised bison meat is a common feature, along with other fresh—often local—meats and produce.
